Oil-Free Peanut Butter

Oil-Free peanut butter is 1 ingredient healthy, vegan and protein-rich butter made using peanuts. Peanut butter is rich in healthy fats and low in carbs.

This healthy peanut butter forms a perfect spread on your toast, crackers to enjoy with some fruits. My favorite way of enjoying this peanut butter is with some apples as a mid-morning snack. I especially like it with green apples, which I find at times is difficult to eat. This peanut butter can also be used in cookies and cupcakes. 

What is Nut Butter?

Nut butter is nothing but a soft mix made using nuts. Nuts are ground in a high-speed blender or a food processor to a coarse or smooth texture. There are different types of nut butter now available. I love to make this Sunflower Seeds Butter or this 2 Ingredients Sugar-Free Hazelnut Chocolate Butter.

Making Nut butter at home needs a little bit of patience. It takes around 10-15 minutes, with a few pauses in between. But at the end, you get a preservative-free smooth or a coarse texture of nut butter.

Do we need to roast the nuts? 

Roasting nuts to make butter helps in releasing the natural oil of the nuts. When we roast we also increase the shelf life of the butter. One can make it without roasting too, but in that case, you might need to add a little bit of oil.

Flavorings in Peanut Butter

Honey Roasted Peanut Butter – When I shared this post for the first time, I flavored it with honey. That is while roasting I added honey and roasted it. I also added a bit of salt and oil. But Now I simply skip both of them and just make it plain.

Spices – One can add nutmeg, cinnamon, paprika to make different flavors in this. Cinnamon with honey goes well. The paprika powder will add a bit of spice.

And if you are a chocolate lover, you can add some cocoa powder or melted chocolate to make chocolate peanut butter.

Process of making Oil-Free Peanut Butter

I made this peanut butter with simple red peanuts. I simply roasted it in an open pan. One can roast this in the oven too. Once done you can remove the skin of peanuts. I sometimes keep and sometimes remove. So it is optional.

Once the peanuts are cooled we start the grinding process at minimum speed. At minimum speed, process the peanuts into a coarse mixture. This should take around 20-30 seconds. Now scrape off the sides and bottom and again start grinding for 1 min or so. 

ProTip – It is best to wait for a min after each minute of grinding or else your grinder or food processor might get hot.

Now increase the speed a bit and grind it again for 1 min with a break of a min. The ground peanuts will now start coming to a little smooth consistency and then form a ball shape.

Now increase the speed to maximum and continue grinding until it forms a smooth consistency or the desired consistency.

That’s it homemade yummy and delicious peanut butter is ready.

Storage and shelf life of Peanut Butter

This peanut butter stays good for up to 6 weeks when refrigerated and stored under proper hygiene conditions. As I am not using any oil or preservatives, I keep it refrigerated. One can keep at room temperature if you are not living in a humid climate too. But I would advise you to refrigerate it. 

A funny thing happened on the day I was making this. I was all done with my butter and ready to take shots. There was a person who just came to my house to do some work. He was just eyeing the butter. when he was leaving he asked me what’s that, I said it is peanut butter. He was like, do you make it on your own? I said yes. Offered him a taste and he was so happy. I got a compliment that you should start selling in Jars. Hehe.

  • 300 gms of Red Peanuts – More or less as per you, but do not start with too much as it will take time to process.

Instructions

  • Spread the Red peanuts on a baking sheet or add them in an open pan.
    300 gms of Red Peanuts
  • Roast at 180 Deg C for 8-10 minutes turning in between until golden brown.
  • If using a pan, dry roast it stirring in between on medium heat.
  • Once it starts turning brown, switch off.
  • Once cooled, take that in the food processor .

  • Start grinding first on a low speed in intervals of 1 min and pausing after every 1 minute or so.
    Coarser grounded peanuts
  • First on low speed let it come to a fine powder. This should take around 1 minute max.
    Coarse grounded peanuts
  • Keep scraping off the sides and the bottom.
  • Now on medium speed grind again in intervals of a min until it forms a ball shape. It's okay if it does not form a ball shape.

  • Increase the speed to max and process until you get a coarser

  • or Process until smooth consistency or consistency desired.

  • Fill it in a clean sterile jar.
  • Let it cool completely, as due to grinding for 8-10 minutes it gets a bit hot.
  • Store it in refrigerator.

Notes

  • Standard US Size cups used.
  • If you like to honey or maple roast, add 2 tablespoons of Sweetener while roasting.
