Singdana (Peanut) Raita\dip

I simply love this Raita. My mother use to always make it with sabudana vada and I simply use to love it. I bet you will definitely like this one instead of having plain dahi with the vada's


Sabudana Vada and Singadana(Peanut) Raita

Ingredients

  • 1 cup Dahi (Curd/Yogurt)
  • 1/4 cup roasted and peeled peanuts
  • 1/2 teaspoon Jeera powder
  • Salt to taste 

Preparation

  1. Ligtly crush the peanuts in a mixer. Do not make a fine powder. Just 1 or 2 rounds for 3-4 secs should be enough.
  2. Make the dahi in a smooth consistency.
  3. Mix the crushed peanuts, salt and Jeera powder.
  4. Yummy dip is ready. It goes along with Sabudana vada or Sabudana pancake or Sabudana Fritters.

Sabudana Pancake/Fritters /Chila

I have soaked some sabudana and the quantity was really very little. My son loves sabudana. But he wanted vada and mummy did not wanted to give that. So now who wins :P... Ok let's make a thing where both are happy.

Sabudana Fritters

Ingredients

  • 1/2 Cup Soaked Sabudana
  • 1 small Potato
  • 1/2 teaspoon Jeera
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon sugar
  • green chillies chopped as per taste
  • Salt to taste
I have not added peanuts here as I wanted it to be light but once can add it.


Preparation

  1. Lightly crush the sabudana in a mixer. Do not make a paste, we still want some round granules. Just give it a churn for 1 or 2 rounds for 3-4 secs. that's it.
  2. Grate the potato. Yes its not boiled. Just grate it.
  3. Simply mix everything.
  4. Heat a non stick tawa. Apply a little oil in your hand, take some portion of sabudana and flatten it in the form of tawa in hand or directly on the tawa.
  5. Cook it on a slow flame, apply little oil.
  6. Yummy Sabudana pancake or Sabudana fritters are ready to serve.
  7. You can eat it as it is, or if required eat it with  Singdana (Peanut) Raita

Storing Curry Leaves (Kadi Patta)


Curry leaves used in most of the Indian dishes. Used as in tempering or also as a marination to many of the dishes. But they get spoiled easily if not stored properly. And outside India, it is really a treasure to buy or have it. Hence need to keep it clean and fresh. Here are my simple ways to store them:






  1. I simply let the curry leaves dry completely. I stored them in the freezer in an air tight container. I liked this method the most as the curry leaves still holds the flavour.
  2. Roast them on a pan. Let it cool down completely and make a powder of it in a mixer and store it in an air tight container in a cool area. 
  3. Now , once I just let it air dry for 3-4 days in open (If you have sunlight it is better), and once it looks a little dried out, I stored them in an air tight container.
  4. Which I recently tried is just microwaved the Curry leaves for 30 secs or so (may be less or more depending on the microwave....So can do in intervals of 10-15 secs and check..It should not burn). Let it cool down completely and then store it in the air tight container.
  5. I have also read comments, where in people wash it, let them dry, and apply oil and store it in freezer. I have not done this yet. Just adding if someone wants to try it out.

Oats Vegetable Chila (Pan Cake)

Soch te reh jaoge…..Difficult to guess the ingredients of this dish. Yes made with oats and loaded with vegetables and masala’s. It takes time to cook , but is a sure hit and what can be better when it is healthy too.





Ingredients

  • 1.5 Cups Oats flour (Rolled Oats grinded in mixer)
  • 2 Tablespoon’s Sooja\Rawa\Semolina
  • Finely Chopped vegetables as you like (eg. Capsicum, spinach, Carrot)
  • ½ cup finely chopped onion (optional)
  • 2-3 grated garlic (optional)
  • ½ inch grated ginger (optional)
  • 1 Green chilli finely chopped (optional and to taste)
  • ½ teaspoon turmeric powder
  • 1 teaspoon Garam Masala powder
  • ½ teaspoon Red Mirchi Powder (as per taste)
  • 1 teaspoon Corainder Powder
  • Salt to taste
  • 1/4 Cup Dahi
  • Water for mixing.
  • Oil for greasing pan 

For Serving:


Green chutney/Imli Chutney/Sauce


Preparation 

  1. Mix all the ingredients and make it in a dosa consistency batter. Keep it aside for 10 minutes.


  2.  
  3. Heat a pan and drizzle some oil on it.
  4. Take 1 spoonsful ladle and form it into a chila\pancake. Size and thickness depends on you. I make it thin.

  5. Cook it on slow gas for 5-7 minutes. Turn only when you think one side has gone little firm, else it will break.

  6. Turn and again cook for 5-7 minutes.
  7. Cook on both the sides until golden brown.

  8. Can add grated cheese also on top.
  9. Yummy and healthy pancake is ready. Serve it with chutney or sauce.
